Like anywhere else in Italy, Italians prepare their pasta by hand. And with this video, you will see how this Sardinian housewife shares her amazing technique in making these tasty seadas (imagine their version of Spanish empanadas, only they are dipped in bittersweet honey), agnolotti (medium-sized potato dumplings) and ravioli (both sweet and salty versions). Sardinians, like most Italians, use semolina in making pasta. They not only make an elastic and durable dough, the cooked pasta has a certain creaminess no ordinary wheat flour can have.
